Ingredients
  • 2 cups strawberries (diced, 400g)
  • 1 cup granulated sugar (200g)
  • 1 tbsp lemon juice (optional)
  • 2 cups heavy cream (480g)
  • 1 cup whole milk (245g)
  • 1/2 tsp vanilla extract
Instructions
  1. Prepare your ice cream maker. If using a KitchenAid ice cream maker attachment, ensure the bowl has been frozen for at least 15 hours.
  2. In a microwave safe bowl, combine the diced strawberries, sugar. and optional lemon juice using a hand masher or fork. Transfer to the microwave and microwave in 15-30 second increments, mashing in between, until the mixture has slightly thickened but is still chunky
  3. Using a spatula, mix in the heavy cream, whole milk, and vanilla extract into the strawberry mixture. Set aside in the fridge until cooled down.
  4. Ensure the mixture is fully chilled before proceeding. Set your KitchenAid or other ice cream maker to the stir setting. With the machine running, carefully pour the chilled mixture into the bowl. Mix for 25 minutes, or follow the specific instructions for your ice cream maker model.
  5. Pour ice cream into a freezer safe container. Allow the ice cream to rest in the freezer before enjoying. Can be served with jam, syrup, or RoohAfza.
